Indeed, taste is the most important of all. Now that I'm in England I find it infuriatingly hard to get a properly poured Guinness. Weatherspoons (chan bar) is the worst. It's worth noting that weatherspoons (UK chain bar) do a fairly large cider called 'Perrys' for abour £3 and it's 8.5%.
