Do you make your own mead? If so, how's that process and what do you use?Rev. Dead Corpse wrote: ↑Mon Mar 23, 2020 6:31 pmListening to my soon to be Ex-Wife whine. Not the wine I was looking for...
Watching 2.5 gallons of fresh mead slowly settle out.
Hoping my vodka supply lasts longer than this crap...

Yep. Make my own. Went over to GotMead and took some tips from those guys. This batch uses Agave and local source clover honey combined with Lalvin champagne yeast. Actually, I had some beer yeast and some champagne yeast and I used both just to see what would happen. I can get exact numbers off the packets I still have in the freezer if you want details.Rye and Coke wrote: ↑Tue Mar 24, 2020 4:18 pmDo you make your own mead? Added some partially crushed raspberry, orange slices, and some apple. Well water.
Boiled the honey and water. Skimmed the foam. Let is cool to around 104-107F. Added to a sterile carboy. I had let my yeast come slowly back up to a room temp, then let it wake up in a 104F water/yeast nutrient mix for about a half hour. Pitched yeast into carboy and used a bottle brush mounted in a drill to aerate the mix in the carboy. Capped with a vapor lock. Let sit until the yeast only bubbled only rarely and the yeast started to settle out. about 5 weeks this time around. Carefully siphoned off into secondaries with airlocks. There they'll sit until June when I bottle it. Out of direct light. Constant temp.

Nice. Honestly, with the way things are going, i think a lot of people will start rethinking home brewing and guns. Have you been doing it for a while, what's the taste like?Rev. I've had mead before, but we're talking store brand, bottled stuff; nothing fresh.

Like honey and a white wine had a baby, with a kick. If I'm doing the math right, the last couple batches I've made are right around 10% ABV. Made one batch that was dry enough you literally needed side water to wash it down with. Another had too much cinnamon and just tasted kinda... off.Rye and Coke wrote: ↑Wed Mar 25, 2020 8:15 pm

Biggest difference to production stuff is you don't have any preservatives. I don't use Campden tablets (sulfites) to sterilize my bottle or to shut the yeast down. If you don't get it off the dead yeast, or if you don't let it settle in the secondary long enough, it can take on kind of a stale bread flavor.
I drink it regularly. I even pour out a libation to my Gods every now and then with it... Although, lately, I think the Aesir and Vanir are fucking asleep at the wheel because Loki is obviously running this clown show...

In my experience, champagne yeast produces the best meads. Clean flavor profile, ferments like a rocket and will tolerate upwards of 16% alcohol by volume. Good on you for making mead, sir.

Jesus, this was everything to me. I caught myself yesterday borderline snapping at everyone in my house. My daughter's 15 and damn near beside herself. I almost belly to back suplexed her through a table.
I gotta get out and do something.

I think those numbahs are the hours on a clock. At least there are indeed things to listen to, watch on the various screens, read, and also eat.
DRINK?
Why, Yes,
and thank you

How many of you can get your booze delivered in these times?
I keep hearing how difficult it is becoming to buy booze in the stores now: long waiting lines, just 5 people inside, etc. Any stores that offer delivery or maybe just using stuff like Uber Eats to order booze? Or is that prevented by law for some reason?
You may now lavish your congratulations upon me.
