Buckwheat is a very low gluten grain similar to sorghum. They brew beer from both in case you are gluten intolerant and beer gives you the shits. You will sacrifice flavor for better continence. Don't want to be in the Depend's crowd. The so called whiskey and spirits, meh...

You know, up until like just after WWII, the USA regulation of bread office said there were Three (3) ingredients to bread. 3!
The breadmaker lobbyists moved into Washington and now there are Thirty-One (31) ingredients in our USA approved interpretation of bread.

Yes, these are the CORRECT!!! answers.

Pulque is the fermentation produced from the sap of the maguey plant (better known as agave).
In essence, it is "pre-tequila" or "pre-mescal" before being refined through distillation.
The beverage was once popular with the Aztec nobility before being adopted by post-colonial Spanish settlers.
Today, it is more so a folk novelty, having lost considerable ground to beer and spirits in the twentieth century.

It is fair to say that pulque is something of an acquired taste, sour and yeasty, with a color and viscosity more like milk than anything else.
Owing that it does not keep well and should be consumed while fresh, you are unlikely to find it outside of its indigenous habitat.
