Filling: Cream cheese, cheddar, fresh lime juice, chopped cilantro and parsley,thin sliced green onions, minced red onions, minced garlic, cajun seasoning, sugar & salt and fresh ground pepper to taste

fill both sides a little less than level with filling

Place a Lil' Smokie on one half, top with other half, wrap well with bacon, toothpick to secure.

Smoke at 325F til bacon crisp (about 1-2 hrs)

or

Bake in oven at 350F till bacon crisp (about 1/2 hour to 45 min)

OR

Grill (about 30 minutes)

OR Grill and----

Egg wash/bread crumb-panko/egg wash/bread crumb-panko and deep fry till golden brown.

alot of places here in texas will cook meat anyway you want..hills cafe if you order a rare burger it is slightly warm in the middle and so juicy/bloody that it turns the bun into mush..

they do a great medium rare (say slightly on the rare side) and it is heavenly..oh an the 'fat bob' burger is wonderful ..HUGE burger, cheese bacon and a fried egg on top..
perfect brunch food with a martini..
