To me it would be the Bodeguita Del Medio in the real world (Cuba) and the Mended Drum in the litterature world.
That place in Casablanca seemed neat as well.

I've always wanted to visit the White Horse Tavern in New York. A pilgrimage of sorts. And I don't want just a drink, I want to get star-shiningly drunk there.
That and get to Ireland and drink with the family.
Other than that.... I just like all my old pubs.

I've done this numerous times. I'd say the thought is more romantic than the actual experience. It's a lot of college kids from NYU and tourists. Well, I've had more than one atop the Sear's tower, and many, many beers atop mountains in colorado. That was all awesome, but over a decade ago. So, now, funds permitting, I would like to drink a Guinness at the factory (see RA's Ireland trip thread) that seems like it would be cool, with the fresh brew and all, and I would also like to drink Rum, of local distillation, on a beach in Tobago.

The White Horse downtown? Been there! Wish I could give you details. Was there with my buddy The Gav, the Stadium detail cop, who had a history there when he was in HVAC (and TERRIBLE at it) before the NYPD. When you're with The Gav, you forfeit your memory. And your dignity. The death of any shred of undrunkenness is a given.
Regarding Ireland - went there and did that. It was incredible. Got to see Grandma's home town, Cahirciveen, in UP THE KINGDOM! County Kerry. Strange though, nearly every Irishman I met vociferously insisted I was a Bronx cop. Had to admit to it just to get 'em onto another subject.
Gotta go to the Scottish Highlands to experience my heritage from my Pop's side.
As to where I'd like a drink? In Bordeaux with Boozie.
