One of the standard morning drinks in Portland is the Prairie Oyster, usually made with gin, egg yolk, pepper, and tabasco. Sometimes there's a few other garnishes, too. Usually served up as a shot, to cure the hangover.
I've come up with my own version, which is less of a hangover cure and a warm you up on a cold evening.
Fill a mixing cup with ice, add a shot of rye, about two ounches of egg beaters, a half tea spoon of cream, and a dash of bitters. Shake to mix, and strain in to whatever you have on hand....a coffee mug works as well as anything. What you get is a good, smooth protein shake. This is similiar to a flip, I guess, but unsweetened and a little less creamy.
