My latest latenight drunken culinary escapade was making fried rice for the first time; it was a lot easier than I thought that it would be. For some reason, I was under the impression that there was some magical step that i would be unable to do without a wok, so I had never tried it.

I looked up a bunch of 'formal recipes' and adjusted them to what I had.

Cook 4 cups of white rice. (A lot of recipes say that you are supposed to use yesterdays' leftover rice. If you can't do this, then at least let the rice cool, which is what i did.)
Heat 4 tablespoons oil in fry pan over medium high. Saute a sliced and peeled onion for a bit, then dump in the rice.
Throw in the last of the frozen peas that I found in my freezer.
Add more oil if necessary.
Fry fry fry. Constantly moving the rice about with spatula.
Beat 2-4 eggs.
Make a hollow, volcano-like mound with the rice and pour the eggs into that and let them start to set.
When the eggs are pretty much finished, mix the whole damn mess up.

Then it's finished; do whatever the hell you want to with it.

On a related note, I have found that the best frozen eggrolls availabel to me are the ones in the kosher freezer . Oy-soooo.

That's similar to my recipe, but I also add a few cloves of chopped garlic and some tumeric. Tasty.

top ramen (your prefered flavor)
one egg

Po'boy spicy peanut sauce:
Tblsp peanut butter (i prefer chunky, but your choice)
tsp lemon juice
dash or two ground ginger
2 Tblsp soy sauce
ground red chili flakes to taste

cook ramen as usual, drop in egg with one minute left in cooking. Remove and serve

sauce: for 1 serving
combine all sauce ingredients and pour over ramen/egg, U se money saved to purchase 2nd from bottom shelf booze.

Not on the rice, but if you have any Mac-n-Cheese or scrambled eggs the kethup is king.

Lotta ramen noodle fans here, I like that.
One of my drunken easy to fix meals, which I just had this evening, is to add a pack of that cheap ass imitation crab meat to the water, let it boil and cook the noodles as per directions. Seems to work best with oriental or shrimp flavor.

there are plenty of hole-in-the-wall Mexican places around here that serve up 2 pound (seemingly) burritos. My fave is steak! And they stay open till 4 a.m. on weeknights and 5(!) a.m. on weekends.

carnitas son buenos! right now there is meat boiling. when it's done, maybe i'll fry it.
