Alcohol in cooking

Recently I didn't have any wine for my risotto and so used brandy instead.

I wanted to gather what the fellow drunkards put in their sauces, soups. stews.etc

White wine, red wine, brandy, beer... Even bourbon.

Depends on what I'm cooking.

Hard to make a Kahlua cream cheese cake without... you know... Kahlua...

We used beer in the beer cheese soup we made recently. It was really good and the beer really stands out.

Yes stouts (and even porters) are excellent in chili and beef stew. Making me wish I'd gotten the goods to make one of those instead of the casserole I'd planned on.

We`re doing beef stew with a bottle of oettinger beer for broth
