I have a question about Tiki Bars

Post by John Barleycorn »

Or more directly, I have a question about making the drinks appropriate for a tiki bar. What are the "must have" drinks for a tiki bar and what ingredients do I need to have to set up on a basic level? So far, when I look at drinks like the Mai Tai, Zombie, and Singapore sling they seem to have no ingredients in common. Traditional Western bartending seems to center around several spirits, several mixers, and a few extra flavoring agents. What are the rules for tiki bartending?

I figured rum would be the main spirit.

It's actually quite a feat to put together a tiki bar, the ingredients used are so varied and some (e.g. falernum) are going to have practically zero use outside of tiki cocktails. I'd say you need the same basic spirits as any decent bar, but the rum selection needs to be more extensive covering white, gold, dark and overproof as a minimum. You'll also probably need a couple of decent spiced rums in there too. Specialist syrups will also be needed like falernum, orgeat, benedictine and cinnamon syrup as well as grenadine and gomme (sugar syrup). Fruit juices are essential too, at least orange, pineapple and mango. Garnishes will need as a minimum limes, pineapple, cherries and oranges. I think the best way to do this is get a decent, authentic recipe for half a dozen tiki cocktails and buy everything you need for those 6, then see where you are. It's gonna be expensive though, which is why I've become a regular at my local Tiki Bar. It's far, far more cost effective that way ;)

Also need some of those ceramic tribal mugs, a decent hand juicer, and a hammock.
