It's not that cheese making is exceedingly difficult. But it does take love and attention to detail. And milk. Lots and lots of milk. A curd press would also be helpful.

It was a tough call for me. I love super sharp paired with good beer and a super salty sourdough hard pretzel.
But over all I'm a funk fan with cheese. Stilton, Danish Blue, Rochefort, Swiss, Jarlsburg an so on.

^ ^ ^ Yeah as previously said #allcheesesmatter. Because it absolutely depends on what you are using it for.
Velveeta and 'murrican is my favorite for grilled cheese and certain dips.
Cheddar is awesome in casseroles.
Lorraine Swiss was always my favorite out from the deli counter.
But my faves lie with the white cheeses like Monterey Jack, Gouda, Edam, all Mexican cheeses (Oaxaca, Chihuahua, Cotija etc.) I even like the processed white 'murrican cheese from Subway too.
I also like those weird cheeses with fruit inside like Blueberry goat cheese. Costco had one with mango in it that was awesome. These are so good on some crusty baguette.
oett always seems to have a stiffie for the feta. It's in 87% of his recipes I think.
