Kraken, Rose's, and a brilliant ginger mead called Ginger Verve.

When it was tough to find real ginger beer (even about a year and a half ago, the only ginger beer in Carbondale was either Gosling's at Westroads Liaours, or Reed's at the Neighborhood Co-op), I came up with what I call the Light and Breezy - basically replacing the ginger beer with ginger ale and replacing the dark rum with light rum.
May you all be hung, drawn and quartered!
Yes, HUNG - with gold and jewels,

and QUARTERED - in the finest homes in the land.

I actually make my own ginger beer syrup for a few recipes,and have been playing with a recipe I've dubbed the Stormy Mojito.

Muddle mint,lime and sugar with a shot of ginger beer syrup
1 & 1/2 shots white rum,
splash of soda
crushed ice
stir well
float a shot of dark rum atop the drink
garnish with mint,lime wedge and ginger slice.

As for the home made ginger beer,it's a pretty simple method,my recipe makes about a litre

500ml freshly squeezed lime juice
4 slices of ginger,diced
300g caster sugar
250ml hot water

I usually blitz it in the bar blender for five minutes,let it settle,blend again then fine strain. Bottle and stick in the fridge,should keep for about 6 weeks. Because it's non-carbonated I can use it in shaken drinks

I created the Light and Breezy because it was hard to find ginger beer back then. Nowadays it's like gimger beer is almost the new coconut water - now I can get both Gosling's and Reed's a bit closer to home at the local Schnuck's, I even found a Stoli branded ginger beer in cans at my local Wal-Mart. Decent stuff! As for the homemade stuff, I've been making my own lime cordial and grenadine.

There is a type of non-alcoholic ginger beer at Target that comes in 4 pack of generic looking cans. It is in the mixer section, next to the regular soft drinks, since nearly all Targets are set up alike. I tried it unmixed, and it was crazy spicy. Very peppery at the beginning and super ginger hot on the aftertaste.

It would be good for all this fancy mixology shit. But, I can only drink straight liquor because I am an uncultured and lazy visigoth.

I was playing about with recipes for a customer last night and came up with something I'm calling Storm Season

1 shot white rum
1 shot dark rum
1 shot ginger beer syrup
1/2 shot triple sec
couple of dashes of bitters
juice of half a lime

Shake and strain over ice and ginger beer (carbonated)

garnish with lime & ginger

You said your homemade ginger syrup's non-carbonated, but how much syrup would you add to a liter of just-carbonated water to make the carbonated stuff? I've got a Sodastream at home and I'm just curious, that's all.

I'm not sure. I definitely wouldn't go with a 1:1 ratio as you'd lose a lot of the flavour. probably more of a 70/30 mix of syrup to soda

Have you tried running your booze straight through the sodastream? Curious what carbonated burbon or rum or scotch would be like.

Haven't really carbonated booze with it before, but I've seen a video on YouTube where Heston Blumenthal carbonated some Blue Nun and fooled quite a few yuppies into thinking it was champagne. I mostly use it for mixers.
