it's a recipe from the start of the 20th century,and n style and flavour it's totally tiki. The honey bourbon/jack adds a smoky bittersweetness that balances the fruit flavours

Introducing the Jackson Moyer. Taking the framework of the Penicillin cocktail made famous by Sam Ross of Attaboy in NYC,and named for the man who patented the method for mass production of the antibiotic.
Our version uses TJD,honey TJD,ancho Reyes chilli liqueur,home made ginger beer,sweet & sour mix and house bitters,topped with a splash of soda.

I've always sided with Trader Vic being the originator of the Mai Tai,largely because his recipe is the one most consistently used as the basis whenever I've seen a bar serving them. So to speak, what happens if I choose the absolute wrong end of spiced rum? Your otherwise beautiful recipe will go down to the gutter.
As a serious bar owner, and I talk to the whole board, shouldn`t you come up with your own local spice-mixture?
Avoid the overly sugary stuff and find the time to cook up something special for a week in adavnce?

We actually do a couple of house infusions for a variety of recipes,including some of our syrups. The problem with trying to get a consistent mix for a spiced rum is that it depends on so many factors to the point where it's not cost or effort effective. If we were more focused on tiki style drinks then it'd be something to consider

I've been neglecting this thread whilst i've been hammering out details for my next menu launch. So here's a triple bill of goodies
First up is the black cherry manhattan.
1 and a half shots of bourbon,half shot of cherry brandy,half shot of sweet vermouth,on shot of cherry puree,one shot of sour mix,couple of dashes of my house bitters. Been serving it in a hickory smoked glass for extra flavour.
Next up is Trusty Chords.
Shot and a half of Jamesons,half shot triple sec,half shot st germain,shot of apple juice,shot of sour mix,top with lemonade then finish with a float of Fernet Branca and a lime wedge
Finally,the dude abides with a Salted Caramel White Russian.
