Bottled 2 dozen bottles of home made hot sauce yesterday. The pepper is an heirloom variety Inca Red Drop weighing in at no more than 10,000 Scoville units with a flavor that pairs very well next to garlic and onion. Add a little port wine for flavor, some Filipino palm date vinegar, salt and my special blend of spices, and you’ve got yourself a hot sauce.
