Oat whiskey? Color me intrigued as well. Typically, the problem with oats is they get gummy when mashed. This is due to high content of the soluble fiber beta glucan, and it’s an issue that has plagued both brewers and distillers since poteen was a thing. But in the modern age of miracle technology, we now have enzymes to break all that gummy shit down and bring us boldly where no booze has gone before! Exciting stuff, even if you’re not a nerd.

What also intrigued me is the decision of Dovetail to place a distillery in the high desert of northern Nevada. While the altitude may have a desirable effect on aging, I can’t imagine an arid desert does oak barrels any favors over the years. Evaporation loss of angel’s share must be ridiculous.

I wouldn't be surprised if the High West oat whiskey made its way to Durango.

The rest seem a bit too crafty, but I'm not ruling them out.

The tasting notes have me primed for the stuff. Bitches love tasting notes.
