It's good to see you 190. How are things?

I am afraid that all I have planned is some housecleaning, clipping the dogs' nails, taking Thing One to Olympia on Sunday, and getting ripped and working pn an article for a friend and then fiddling around with my website. As Mr. Daphne is away, the sex portion of this weekend's broadcast has been replaced with previously-scheduled programming. *sigh*

This being said, I should grill something for the Things besides the veggie kabobs I'll be eating. I have a bunch of chicken breasts in the freezer. Does anyone have a good Caribbean lime jerk marinade recipe and if so, would you post it? The Things like jerk chicken when they eat it at restaurants. Anyone?

I'll head up to the Veteran's cemetary on Monday.
I'm taking a rare day off on Friday and will make great plans to get done all the things i've planned to do around the old shack, but will most likely just imbibe instead.

Holding down the fort, taking care of the kids, and getting ready to go to bed. I stayed up too late playing online Mah Jong. That's such an addictive game.

Well, my weekend will most likely not include barbeque, mostly because I live in a flat, I will however cook brat's in beer. Rather unsurprisingly Memorial Day is not a big deal here, or in fact anywhere other than the US, so we don't get any time off either, in fact on Monday I even have the joy of paying my taxes. Compensation arrives on Wednesday in the form of the Dragon Boat Festival, which is a day off, and will hopefully involve the consumption of Zong Zi.

Daphne, Mah Jong is highly addictive, and a very easy way to lose money. The guys I know who play most weekends often win or lose staggering amounts in the course of a single evening. I used to know how to play but I've never really gotten into it, which is probably a good thing. If I marry a local there will only be one of us likely to lose a month's salary in a night!

If not, more beer and several months worth of carne asada for you eh?

Me? Let's see...new car shopping and maybe barbecuing with my son and the ex on Saturday. Probably rendezvousing with Maine Man and his priest friend in Sonoma on Sunday (MM will be here in Chico on 6/7). And then the Silver Dollar Fair on Monday with son. And after THAT, only 4 more days of work and then SUMMER VACATION!! Yeah, life is rough for Lushiekins.

Does anyone have a good Caribbean lime jerk marinade recipe and if so, would you post it? The Things like jerk chicken when they eat it at restaurants. Anyone?

To make it simple: Marinate chicken breasts in lime juice for 1 hour (use Real Lime- you know like the Lemon juice you can buy in the green bottle) not sweetened, with some minced garlic. Add Chili-Garlic sauce- Rooster (known as Siracha. Sprinkle liberally with Jamaican or Caribbean Jerk Spice ( you can find it in the spice aisle). Grill to 165.

Why not make Jerk Chicken Kebabs with the lovely veggies you have?

If you are really determined to make your own Jerk Sauce- the main ingredients are: Sorry - I am horrible at amounts- us e your judgement:

onions, yellow
onions, green
scotch bonnet or other hot pepper, seeded
whole garlic
fresh cilantro
Stir in some of that Siracha if you were able to get it.

Pulse in food processor till almost smooth but still a littel chunky.

Stir in:
Allspice
Thyme
just a touch of cinnamon and nutmeg to your taste
salt
a tiny touch of sugar, brownis good. Sugar balances the heat.
pepper - Lime pepper is even better is you can get it.
Cayenne to your taste

Add 75% lime juice to 25% veg oil to make a thick marinade. Let sit for an hour (in fridge) no more than 3 hours.

Grill or whatever. Garnish with lots of fresh chopped cilantro and green onion.

you all suck because I have to work Sat, Sun AND Monday. I will be laughing at your hangovers Tues, because I will be drinking at the pool. (Life at work has gotten much better)

I had plans for a four-day bender... but I will still go on a three-day bender and watch 1100 miles of racing on Sunday.

I bought stuff to make cheeseburgers and hot dogs and bratwurst... bought a whole chicken... bought a $20 ribeye ("How are those hot dogs, kids?")...

Two dozen Tecates (fuckers didn't have anything bigger than a 12-pack)... most of a handle of Stoli... assorted soda pops and mixers... some tortilla chips and La Salsa Chilena, which is excellent...

Going to sit in the shade of the house once I get tired of pulling weeds and trimming the glandular jasmine... dig a cold Tecate out of an ice-filled cooler...

Four days off. Not going to do a fucking thing except drink, grill and garden.

Thank you Cheffie. I actually have all of that in my house save for the Scotch Bonnets, but I have a habanero. It should pan out.

It's so nice to have a chef on the forums. Cheers to you!

EDIT Lush, have you ever seen those 2 movies that you can rent at Blockbuster about Mah Jong? I hear they are pretty funny, kind of like the Kung Foo Hustle. This guy realizes that he can memorize where every tile of the 144 are located, and well, it just gets silly from there. I'm going to rent them later this week to get a feel of what you're talking about, because this movie series has tournament references in it.
