And tonight I am reading all about how to make the perfect fondant, for my candies. I do this because I love it, and in memory of the greatest candyman of all times. He was my boss, and my inspiration.

Well, you have to cook them first. Gently. Candymaking is an art, like any other, and you have to have a gentle hand with the chocolate. It is a fragile thing, and it is so easy to spoil.
