Alcohol in cooking

Post by TheDrunkardAnglo »

Recently I didn't have any wine for my risotto and so used brandy instead.

I wanted to gather what the fellow drunkards put in their sauces, soups. stews.etc
Major Strasser: What is your nationality?
Rick: I'm a drunkard.
Captain Renault: That makes Rick a citizen of the world.

Stouts in chilli is an amazing thing. So deep, so lush.

White wine, red wine, brandy, beer... Even bourbon.

Depends on what I'm cooking.

We used beer in the beer cheese soup we made recently. It was really good and the beer really stands out.

This. Does wonders for a beef stew, too.

Yes stouts (and even porters) are excellent in chili and beef stew. Making me wish I'd gotten the goods to make one of those instead of the casserole I'd planned on.

A few new additions to the cookbook library. I'm not a big drinker of these but cooking with them opens up a whole new world.

That's cool. The maple aspect of JD might lend some nice flavors.

What recipes are you going to try first?
Don't worry. We're in no hurry.

So it has good recipes but many seem to be more of an accompaniment with drinking I guess instead of incorporating the Jack. But I found a few good ones that do just to give y'all some ideas.

Moore County Cheese Ball (rolled in pecans)
Premium Onion Soup
Down in the Hollow French Toast
Jack's Black Bean Soup
Country Ham Stuffed Apples
Boozed Baked Beans
Ladies of Lynchburg Tea Loaf (with pecans)
Whiskey Nut Bread
Intoxicated Chicken
Steak Tartar
Tennessee Baked Ham in a Blanket
Old #7 Flank Steak on the grill
Tennessee Whiskey Chicken
Chocolate Fondue
Jack Daniel's Brownies & Glaze
Ol' South Pralines
Blackberries Jubilee

Bourbon Boston beans and Kentucky quarter pounder burger. You can't go wrong with beans, burgers and bourbon.
