Actually, you’re not far off from what I was thinking. My suggestion would be liquid cheese (queso dip or a fondue mix of Emmental and gruyêre; may god smite thee if you use gouda), but I would also pick a nice mustard and blend that in to taste. You guys have no shortage whatsoever of good mustard in Europe.
Another possibility would be a sauce consisting primarily of avocado, sour cream and buttermilk with salt, pepper, garlic and a pinch of savory herbs. Basically an avocado ranch dressing. The only drawback is you’d have to whip it up fresh because I couldn’t see it keeping for very long, even in the refrigamarator.

I dig the Japanese perspective too on a McDonalds fried container full of calories. Kari kari, atsu atsu. Good for your snack time... I’m gonna take that one on faith.

Smoked queso in a big hotel pan. at least 3 types of cheese preferably 5. Crumbled chorizo. Jalapenos. Guajillo peppers, Chipotles in adobo. a full brick of Velveeta.
Brick goes in the center of the pan and each item cheeses, meat, and peppers get piled in each corner of the pan. All take the smoking to their own ability. Once all the cheeses are molten hit it with an emersion blender through the cheese and chillies. try not to pulverize the meat. Blend with hand held mixers. MMMMMMMM

^ ^ ^ Delicious! And think of all the possibilities that this can be dumped upon. Nachos...french fries...tater tots...hot dogs...burgers...ribs (see comment below), baked potatoes...even pastas. There really is just no wrong answer.

While we're on the most beloved topic of queso... this sounds like something Patchez would do (or has probably done.)
On an episode of Diners Drives & Dives, Guy Fieri visited Grand Ole BBQ y Asado Restaurant in San Diego where he tries the El Borracho beef rib. It's a massive smoked rib resting on polenta that is smothered in a chorizo & beer queso sauce then topped with a relish.
YAY OR NAY? I don't even need to answer this question. It was officially added to the list of "Things That We Would Drench in Patchy's Smoked Queso Dip" (refer to previous comment) which almost begs for a thread of it's own.
