For me it depends on the scene, but here are a few old standbys
Finnegan's Wake - usually fun if played live, goes for all celtic tunes
For the Dubliners fan - how about The Town I Loved So Well for introspection
Wolfe Tones - spirit of a nation
Jerry Jeff Walker - viva terlingua
Bill Monroe/Doc Watson - for the high lonesome sound
Merle - can be good if feeling wreckless, rebellious or depressed
Dylan - if waxing philosophic
Steely Dan - if in a wise ass mood
Dan Hicks - smooth relaxing stuff
The Dead - my roots, many possible directions
