Vodka is never on hand for me (I have this "thing" where I rag on it at all times). But my God, this sounds brilliant.

After smoking a torso sized beef brisket for 14 hours, there were naturally some liquid eau de beef accumulated in the drip pan. This I felt obligated to simmer just a bit further in a pan on the stove top. Once syrupy and reduced to its peak essence, the cooled, heavy au jus concentrate went into a simple recipe as follows:
Au Jus Bullshot
1 part Beef Drip Concentrate
2 parts Vodka of Choice
Serve at room temperature in an amply sized shot glass or rocks glass. A dollop of prepared horseradish can also be served on a spoon as a "chaser" to the boozy, smoky, beefy goodness you have just imbibed.
This makes me want to get some raw oysters and pour gin into the half shell.

1 tspn ea:lime juice, mexican hot sauce, Worchestershire, powdered carribean jerk seasoning
black pepper to taste.
Coming back around to teh idea of letting the vodka take control instead of being hidden away; still like bringing the heat, though.

After talking to Constantine tonight (he's actually a really good chef)
there was discussion about the broth form meat: he is all about au jus, of course, and that is good and most proper with wine as a reduction agent for the black iron skillet,
but me grandma was quite fond of saving the broth form new England Style Boiled Dinner. Ham or brined beef. Take the potatoes out so they don't desolve, and the cabbage soaks up a lot of the fat form the meat, and turnip and carrots are fine in the liquid, so they can continue to trade vitamins with their flavor in the broth.
She called the broth this: "Pot Liquor" for some reaon lost to me now as I attempt to imaprt this imformation to you as I am heabvily inebriated and yet must persevere.
(OK. Fuck the backspacing and attempting to write correctly.
Mind you, pot liquor sounds like another sort of thing.
For her, she would warm up the broth in the microwave for days after and sip it. She believed it to contain all of the nutrients of the ingredients, and I believe that she was correct.
So here is, in honor of our good friend Palinka, who was quite fond of hot, savory drinks, to be read with the Modern Drunkard Magazine in hard copy, when the snowy wind howled in the eaves and the power sudeenly went out and you had to read by candle/lantern light
The New England Styled Boiled Dinner Bull Shot,
Or,
The Yankee Shot
90ml Pot Liquor
60ml vodka
(10 -20ml saké or dry sherry, if desired)
A dash of Worcestershire (or dark soy) sauce
A squeeze of lemon
Tabasco and/or Cayenne pepper
Freshly ground Black pepper
(Dried chilli flakes, if desired)
Lemon actually makes it invigorating. Perhaps this tincture, wiht its vitamins, could have kept Booznik yet alive with us.
Yeah, miss them two summina bastdges.
